This is a variation on my usual bacon wrapped dates stuffed with halloumi cheese. This time I stuffed the dates with goat cheese (I used a piping bag and made sure the goat cheese was at room temperature) and wrapped them in thinly sliced Italian prosciutto. Prosciutto can be pretty salty and when baked becomes even saltier (and slightly tough) so I only baked these for a few minutes to heat them through. I assembled these the night before so that the goat cheese had time to set up.
