red chicken & mango salad

During this muggy weather I don't like cooking big hot meals. Instead, I like to whip up quick and easy dishes that are still hearty and delicious. Here is my recipe for red chicken and a simple mango salad.





2 chicken breasts
1 semi-ripe mango
1 tbsp red miso paste
1/2 C of ponzu sauce
1 tbsp hoisin sauce
1/3 C of honey
1 clove garlic, finely chopped
salt and pepper to taste

dressing for mango salad
1 tbsp tamari
1 tbsp of honey
1/3 C of rice vinegar
1 tbsp roasted sesame seeds
salt and pepper to taste

1. Preheat oven to 350 degrees.

2. Lightly salt and pepper the chicken and put in a roasting pan.

3. Whisk together your red miso, ponzu, hoisin and garlic. Reserve some sauce for serving.

4. Brush the sauce onto the chicken before placing into oven.

5. Make sure to baste your chicken every 5-7 minutes and cook until chicken is tender. Do not overcook the chicken as the texture will become rubbery and dry.

6. Spoon over reserved sauce onto chicken and serve with Jasmine rice.

For the salad:

1. Julienne the mango and set aside.

2. Make the dressing by whisking together all of the sauces and sesame seeds.

3. Before serving, drizzle the dressing over the mango.
